My Olive Oil El Olivar de Pegullal is our Extra Virgin Olive Oil. This project started 13 years ago. By that time I was still living in Spain. My very good friend and mentor Mrs Edurne Sendra convinced me to help her out build the olive plantation. It all started like a small yet very enjoyable project. We planted a few different varieties of olive trees to check how they would perform in Galicia, the Northwest of Spain. We were pioneers in this project that many followed years later. Spain is well known by its very high quality olive oil, but usually all of them are produced in the Southern area, which it is considerably drier than the North, where we are located. This meant we didn’t know how those varieties were going to grow and adapt. After two years of careful selection and tests, we kept the best suitable varieties Arbquina, Picual, Arbosana & Hojiblanca. Rest assured we both learned a lot over the years and were able to produce the olive oil we can offer to you today. ‘Its aromas are unique and exquisite. It smells like wild flowers and pure air. The whole harvest is done manually. It’s processed in our family home. We don’t heat up the oil. Its cold pressed and only pressed once. This allows the oil to keep all its flavors and aromas preserved. ENJOY IT! ❤️
